Hot-Heart-Cakes for my Valentine

A savory and spicy dish for my Valentine! I think also that these little heart cakes could be aphrodisiac :o)
The "secret" ingredient is the dried Zenzerino pepper produced by the monastic community of Siloe near Grosseto.



Zenzerino powder is a mild red pepper powder with a intense flavowr of fresh pepper. It could be substitute with another mild red pepper.


Hot Heart Chicken Cakes

200g Chicken Breast
220g Flour
150ml Olive oil
100ml Milk
100g grated Gruyère
1 tsp Zenzerino Pepper Powder
3 Eggs
1 packet of backing powder (16g)
Salt


Cut the chicken breast in small cubes (1/2 cm). Fry them in a pan with 3 Tsp of olive oil taken from the amount. When they are ligth golden add the Zenzerino powder, mix and turn off the heat.
In a bowl wisk the eggs with the oil and the milk. Add 3 pinch of salt.
In a mixing bowl shift togheter the flour and the baking soda. Add the chicken cubes and the cooking oil. Add also the cheese and mix well.
Add the liquid ingredients, mix until well combined.
Fill the baking form with the cake mix and cook at 170° for 20-25 min.

Note: use 1 big loaf pan or a muffin pan. It will produce 16 medum muffins or 12 big muffins.
